Red tea fermented with Ya Bao, Vietnam (spring 2023)

In appearance: large, curved flagella of dark-brown tea leaves with long stems. The fragrance is intensive, berry-floral. The liquor is transparent, with a red-chestnut shade.

The bouquet of the ready-made tea is bright and vivid, woody and berry, with notes of rotten leaves, honey, dried fruits and spices. The aroma is deep and warm, fruity and berry. The taste is rich, a bit tart, sweetish, with a fruity sourness and a refreshing finish.

Steep the tea in a hot water (95°C) in a gaiwan or in a teapot made of porous clay. The proportion is 6 g per 100 ml. The time of the first steeping is 15 seconds. After that do short steeps (for 3-5 seconds) increasing steeping time for each subsequent step, if necessary. You can steep the tea up to 7 times.
